THAI-STYLE BARBECUED CHICKEN (Kai Yang)

This classic Thai dish brings you chicken marinated with a unique blend of Thai herbs and grilled to a delicious, moist texture.

Ingredients:

2 pounds chicken

2 tablespoons fresh ginger, chopped

2 tablespoons Frozen Lemongrass, thawed

2 tablespoons coriander root, chopped

2 cups Light Soy Sauce

1 teaspoon sugar

2 tablespoons Black Pepper, ground

1 1/2 tablespoon Curry Powder

Sweet Chili Sauce

Complimentary item: sweet rice

Instructions:

1. Mix all ingredients, except for chicken, in a blender. Marinate the chicken with the mixture in a refrigerator for at least 6 hours.

2. Broil the chicken slowly over a low heat.

3. Serve with sweet chili sauce.

Often in Thailand, this dish is served with a complimentary side of warm sticky rice.
