PAPAYA SALAD (Som Tum Thai)

Ingredients:

6 ounces green papaya, sliced

8 long beans, cut

2 tomatoes, sliced

2 cloves garlic

1 tablespoon unsalted peanuts

2 1/2 tablespoons Fish Sauce

1 tablespoon Coconut Sugar

2 1/2 tablespoons lime juice

2 red hot chili peppers

1 tablespoon dried shrimp

Lao Mortar

Instructions:

1. In a mortar, crush chilies and garlic.

2. Then add peanuts, dried shrimp and long beans. Season with fish sauce, coconut sugar, and lime juice. Add the tomato and slice papaya. Mix well.

3. Serve garnished with long bean.
