SQUID SALAD (Yum Pla Muk)

Ingredients:

2 cups squid

4 ounces shallot, sliced

4 ounces onion, sliced

5 red hot chili peppers, lightly crushed

1 tablespoon Stripped Pickle Ginger

1 tablespoon red hot pepper, sliced

10 mint leaves

2 tablespoons lime juice

2 tablespoons Fish Sauce

1/2 teaspoon sugar

Instructions:

1. Clean the squid and cut into bite-size pieces. Boil in a pot with water until just done. Drain water from squid.

2. Mix all other ingredients together. Add squid and mix.

3. Serve over mint leaves.
