CHOPPED-CHICKEN SALAD (Larb Gai)

Ingredients:

2 cups ground chicken

2 tablespoons Fish Sauce

2 tablespoons lime juice

1 tablespoon Ground Hot Chili

2 tablespoons rice powder, roasted until golden brown

2 tablespoons shallot, chopped

2 tablespoons scallion, chopped

10 mint leaves

Long beans

Cucumber

Chinese cabbage

Lettuce

Instructions:

1. Boil ground chicken in a pot with water until cooked. Remove from heat and drain water out.

2. Add fish sauce, lime juice, chili, rice powder, shallot, scallion and some mint. Mix well.

3. Serve with long beans, cucumbers, cabbage and lettuce. Garnish with mint.
