SOUR AND SPICY PRAWN SOUP (Tom Yum Goong)

Definitely a huge favorite among the Thai people, this spicy and tangy soup will surely satisfy your taste buds.

Ingredients:

1 cup tiger shrimp, large

2 cups chicken broth

1/2 cup Peeled Straw Mushroom

3 slices Sliced Frozen Galanga, thawed

5 kaffir leaves

4 red hot chili peppers, gently crushed

3 stalks Frozen Lemongrass, thawed and chopped into 2-inch pieces

2 tablespoons lime juice

2 tablespoons Fish Sauce

Coriander

Instructions:

1. Bring the chicken broth to a boil. Add lemon grass, lime leaves, galanga, shrimp and mushrooms. Cook for a few minutes and then remove from heat.

2. Season to taste with fish sauce, lime juice and chili.

3. Ladle into a bowl. Serve topped with coriander.
