BEEF GREEN CURRY (Kaeng Khew Waan Neua)

This curry combines the creamy flavor of coconut milk with the pungent taste of Thai spices making a unique dish.

Ingredients:

1 cup steak, finely sliced

1 1/2 cups Coconut Milk

1/4 cup Thai eggplant

4 kaffir lime leaves

1/4 ounce basil

3 red hot peppers, sliced

2 1/2 tablespoons Fish Sauce

1 teaspoon Coconut Sugar

1 tablespoon Green Curry

2 tablespoons vegetable oil

Jasmine Rice

Instructions:

1. Heat oil in a frying pan, then add curry paste.

2. Add beef and coconut milk. Bring to a boil.

3. Add eggplant, fish sauce and coconut sugar. Then add lime leaves, basil and pepper. Remove from heat.

4. Serve with a bowl of Jasmine Rice.
