FRIED CRAB IN CURRY SAUCE (Pu Pad Phong Kari)

In this savory dish, fresh crabs are fried in a mixture of Thai seasonings making your seafood even more tasty.

Ingredients:

1 fresh crab

1 onion, sliced

2 stalks Chinese celery, cut into 2-inch pieces

2 red hot peppers, sliced

1/4 teaspoon Ground Pepper

2 teaspoons Curry Powder

1/2 cup milk

1 egg

1 tablespoon Nam Prik Pao

2 tablespoons Oyster Sauce

2 tablespoons vegetable oil

Instructions:

1. Wash the crab, remove the shell and chop into pieces. Crack the claws and legs.

2. Heat oil in a frying pan. Add crab and fry until cooked. Then add curry powder to the pan.

3. Mix milk and chili paste together, then beat in the egg. Add this mixture to the pan with oyster sauce.

4. Chop the onion, celery, peppers and scallions. Add these to the pan and sprinkle in pepper. Continue to stir on heat until done.
