FRIED FISH IN SWEET AND SOUR SAUCE (Pla Peow Waan)

Ingredients:

2 cups fillet red snapper fish

1/2 cup chicken broth

1 tablespoon scallion

1/4 cup carrot, sliced

1/4 cup pineapple, diced

2 tablespoons tomato sauce

1 teaspoon Oyster Sauce

3 tablespoons sugar

1 tablespoon Distilled Vinegar

1/4 teaspoon salt

3 cups cooking oil

1 tablespoon corn starch

Instructions:

1. Fry the fish in oil until golden brown. Set aside.

2. Heat the oil and add pineapple and carrot. Stir, then add tomato sauce, vinegar, oyster sauce, sugar and salt.

3. Mix corn starch with some water. Pour the mix onto the pan and stir.

4. Pour the sauce in the pan onto the fish before serving.
