FRIED FISH CAKE (Tod Mun)

Tod Mun or Fried Fish Cake is one of the most well known appetizers in Thailand. Made with a hint of red curry and other aromatic spices, this dish combines all the right flavors into one delicious appetizer.

Ingredients:

2 pounds fish meat

4 tablespoons Red Curry Paste

1 egg

1 1/2 tablespoons salt

1/2 tablespoon sugar

5 kaffir lime leaves, finely chopped

1/2 cup long bean, finely chopped

3 cups cooking oil

INGREDIENTS FOR CUCUMBER SALAD

3 tablespoons sugar

1 teaspoon salt

1 1/2 tablespoons Distilled Vinegar

Cucumber, sliced

Shallot, chopped

Hot pepper, sliced

Stone Mortar

Instructions:

1. In a Stone Mortar, grind fish meat until paste-like. Add chili paste, egg, salt and sugar. Mix well.

2. Add long beans, lime leaves and basil together.

3. Shape the fish meat mix into small patties by hand. Fry in oil over medium heat.

4. Serve with cucumber salad.

5. Prepare cucumber salad by bringing sugar, salt and vinegar to a boil. Remove from heat and let cool. Pour the mix over the rest of the ingredients in a small bowl.
