Ingredients:
1 cup Waterchestnuts, diced
1/2 cup Tapioca Flour
1 1/4 cup sugar
2 cups Coconut Milk
Red Food Coloring (or color of choice)
Crushed ice
Instructions:
1. To make simple syrup, boil sugar with 3/4 cup water. Set aside and allow to cool.
2. Place water chestnuts in a bowl with some water. Add food coloring and turn water chestnuts over until coated. Drain.
3. In another bowl, coat colored water chestnuts in tapioca flour. Place these in a strainer and remove excess flour.
4. Boil 5 cups of water. Add water chestnuts and allow to boil for 3 minutes. Remove from heat and place water chestnuts in cold water to cool. Once cool, drain.
5. Mix simple syrup with coconut milk. Add water chestnuts and serve with ice.
