LIME CRUST TUNA AND GREEN CURRY PASTE

Ingredients:

1 tbsp. Mae Ploy Green Curry Paste

375g. Tuna fillet

1 tbsp. Grated lime grated

1/3 Lime juice

1/4 Fresh dill, finely chopped

2 tbsp. Fresh parsley, chopped

2 pcs. Small red chilli, seeded and chopped

2 tbsp. Olive oil, for coated

400g. Linguini

1 tbsp. Olive oil, for sauté

Extra lime juice and olive oil, to serve

Sea salt and cracked black pepper

Instructions:

1. Combine the lime rind, lime juice, parsley, chili, olive oil, salt and pepper and pour over the tuna to coat.

2. Refrigerate for 20 minutes.

3. Boil the pasta in a large saucepan until al dente.

4. Heat the oil in the frying pan, add Mae Ploy green curry paste stir until aromatic then add the pasta, stir well.

5. Remove the tuna from the marinade and reserve the liquid.

6. Pan fry the tuna for 1 minute each side or until well seared, then slice.

7. To serve, pile the pasta on serving plates and top with sliced tuna and the reserved marinade.

8. Drizzle with a little olive oil and lime juice before serving.
