PUMPKIN IN COCONUT MILK (Fak Thong Kaeng Buat)

Ingredients:

2 cups pumpkin, cut into 2-inch pieces

2 cups Coconut Milk

3/4 cup sugar

1/4 teaspoon salt

Instructions:

1. Warm coconut milk over medium heat. Add pumpkin and allow to boil for a few minutes.

2. Add sugar and salt. Stir and allow to return to a boil.

3. Remove from heat and serve hot.
