TARO COCONUT CUSTARD (Khanom Moh Kaeng Pheuak)

Ingredients:

1 1/2 cups taro, boiled and mashed

1 1/4 cups Coconut Milk

5 eggs, lightly beaten

1 tablespoon all-purpose flour

1/2 teaspoon salt

1 1/4 cups Coconut Sugar

1 tablespoon shallot, thinly sliced and fried

Instructions:

1. In a bowl, mix coconut milk, flour and sugar. Set aside.

2. In another bowl, mix taro, eggs and salt. Beat until smooth. Then combine with the first bowl in a pot.

3. Place pot over medium heat for 5 minutes. Remove from heat and prepare several serving bowls. Distribute contents of pot into serving bowls evenly.

4. Place these bowls in an oven at 350F for 35 minutes, or until surface is golden brown. Serve garnished with fried shallots.
