SWEET DUCK WITH CORIANDER SALSA

Ingredients:

1 tbsp. Mae Ploy Sweet Plum Sauce

1 tbsp. Soy sauce

1 tbsp. Oyster sauce

1 clove of garlic, crushed

2 pcs. Duck breast (200g/each), trimmed

50g Rocket leaves

100g Bell pepper, cubed

100g Cucumber, cubed

Coriander salsa:

1 cup Coriander leaf

1 cup Mint leaf

3 heads of spring onion, green part only and chopped

1 tbsp. Lime juice

1 tbsp. Cooking oil

1/2 tsp. Sugar

Instructions:

1. Preheat the oven to 180°C (355°F).

2. To make the coriander salsa, process the coriander, mint, spring onion, lime juice, cooking oil, and sugar with the food processor until finely chopped. Set aside.

3. Mix Mae Ploy sweet plum sauce, soy sauce, oyster sauce and garlic together.

4. Spread the mixture evenly over the duck.

5. Heat a nonstick frying pan over high heat, place the duck fillets and cook for 3-4 minutes or until browned.

6. Place the ducks on a baking tray lined with baking paper and roast for 10 minutes or until cooked through.

7. Serve duck with the salsa, spoon over the rocket leaves, bell pepper and cucumber salsa.
