SEARED MASSAMAN BEEF AND PICKLED ONION SALAD

Ingredients:

1 tbsp. Mae Ploy Massaman Curry Paste

1/2 cup Mae Ploy Distilled Vinegar

650g. Rump steak

2 tsp. Water

2 heads of red onion, finely chopped

3 pcs. Spring onion, shredded

3 tbsp. Sugar

1/2 cup Fresh mint, roughly chopped

1/4 cup Fresh flat-leaf parsley, chopped

150g Green oak

Oil, for brushing

Crashed black pepper

Pickled red onion salad

Instructions:

1. Marinate rump steak with Mae Ploy massaman curry paste and water for 2 hours.

2. To make the pickled red onion salad, place the red onions, spring onions, Mae Ploy distilled vinegar and sugar in a bowl and allow to stand for 10 minutes.

3. Meanwhile, brush both sides of the steak with oil and sprinkle with cracked black pepper.

4. Preheat a frying pan or grill pan over high heat.

5. Cook the steak for 2 minutes each side or until well seared and cooked to your liking.

6. Slice the steak into thick pieces.

7. Toss the pickled red onion salad with mint, parsley and green oak and place on serving plates.

8. Top with the seared steak pieces and serve.
