SWEET COCONUT STICKY RICE WITH BANANA (Suman Malagkit)

Ingredients:

2 cup Mae Ploy Coconut Milk
8 whole bananas, Mae Ploy Coconut Milk
2 cups sticky rice
1/2 cup sugar
1 1/2 tsp. salt

Instructions:

1. Heat Mae Ploy Coconut Milk in a large saucepan over medium heat.

2. Add stick rice, sugar and salt.

3. Stir consistently over medium heat for 30 minutes, and then reduce to low heat until the coconut milk is reduced and absorbed into sticky rice.

4. Set aside to cool down the sticky rice.

5. Lay banana leaf on a flat surface.

6. Spread a spoonful of coconut-cured sticky rice.

7. Fold the inside layer of the banana leaf over the rice, followed by the outside layer.

8. Tie with cooking twine.

9. Repeat with the remaining ingredients.

10. Arrange the wrapped banana in a steamer and steam over medium heat for 45 minutes.

11. Unwrap and serve hot or at room temperature.
