MUSSELS IN EARTHEN WARE (Hoi Malaeng Phu Op Moh Din)

Perfect for seafood lovers, this traditional Thai dish brings you fresh mussels seasoned with a variety of aromatic Thai spices.

Ingredients:

25 mussels

10 slices Frozen Galanga, thawed

2 stalks Frozen Lemongrass, thawed and crushed

5 kaffir lime leaves

20 sweet basil leaves

2 red hot chili peppers, sliced

4 shallots crushed


FOR SAUCE

10 red hot chili peppers

7 cloves garlic

2 tablespoons lime juice

3 tablespoons Fish Sauce

1/2 teaspoon sugar

Stone Mortar

Instructions:

1. Wash mussels and place in an earthenware pot. Add all the other ingredients.

2. Place lid atop pot and cook for 10 minutes over a medium heat.

3. Remove from heat and serve in the same pot. Serve with sauce.


FOR SAUCE

1. In a mortar, grind the chili and garlic. Mix in a bowl with the remaining ingredients.

2. Place in a bowl to be served with mussels.
