SPICY VIETNAMESE SAUSAGE SALAD (Yum Mu Yor)

Ingredients:

2 cups Vietnamese sausage

3 tablespoons onion, sliced

5 red hot chili peppers, lightly crushed

2 1/2 tablespoons lime juice

1 1/2 tablespoons Fish Sauce

3/4 teaspoon sugar

4 slices tomato

2 stalks scallion, chopped into 2-inch pieces

2 stalks Chinese celery, chopped into 2-inch pieces

Lettuce

Cucumber

Instructions:

1. Slice sausage thinly and cut into pieces approximately 3/4 of an inch wide.

2. Add onion, chili, fish sauce, lime juice, sugar, tomato, scallion and celery to the sausage. Mix well.

3. Serve with cucumber slices and lettuce.
