SPICY STIR-FRIED PRAWNS (Pad Khi Mao Goong)

Ingredients:

1 pound tiger prawns

1/4 cup holy basil tips

1 teaspoon sugar

2 tablespoons Fish Sauce

3 tablespoons vegetable oil

FOR CHILI PASTE

6 red hot chili peppers

5 shallots

10 cloves garlic

1/2 teaspoon Shrimp Paste

Stone Mortar

Instructions:

1. In a Stone Mortar, grind the chili paste ingredients until just mixed.

2. Shell the prawns. Leave the tails attached, but remove the heads.

3. Wash the basil.

4. Over medium heat, heat oil in a wok. Add chili paste and stir-fry for a few minutes. Then add prawns and continue to stir-fry until fully cooked.

5. Season with fish sauce and sugar. Mix thoroughly and add basil.
