FISH CURRY (Pla Choo-Chee)

In this traditional dish, the spicy and aromatic flavor of the curry sauce perfectly complements the crispy fried fish.

Ingredients:

1 Frozen Mud FIsh, thawed

1 cup Coconut Milk

1 tablespoon Chu Chee Curry Paste

1 1/2 tablespoons Fish Sauce

1 tablespoon sugar

3 kaffir lime leaves

1 red hot pepper, thinly sliced

3 cups cooking oil

Instructions:

1. Wash the fish. Remove the entrails and gills, and allow to drain.

2. Deep fry fish in oil until golden brown.

3. Stir curry paste and coconut milk over medium heat for a few minutes. Season with fish sauce and sugar.

4.Top the fish with 1 tablespoon coconut milk, lime leaves and pepper before serving.
