Ingredients:
1 red snapper fish
1 cup chicken broth
3 tablespoons Fish Sauce
3 teaspoons sugar
1 1/2 tablespoons Pickled Ground Red Chili
5 teaspoons red hot chili peppers, chopped
2 tablespoons garlic, chopped
3 tablespoons onion, chopped
1 red hot pepper, sliced
3 cups cooking oil
Instructions:
1. Wash the fish. Remove the entrails and gills, and allow to drain.
2. Fry the fish in oil until golden brown. Set aside.
3. In a wok, heat 2 tablespoons oil and fry with garlic and chili. Add chicken broth, ground chili, onion, pepper, fish sauce and sugar to taste.
4. Spoon the sauce over the fish before serving.
