PRAWN AND HOLY BASIL FRIED RICE (Khao Pad Ka-Phrao Goong)

This dish, which can be best described as a spicy fried rice, gives the traditional Thai entree, Pad Kra Pao, a special twist.

Ingredients:

1 cup Jasmine Rice, cooked

5-6 tiger or white prawns

1/2 cup holy basil leaves

1 teaspoon red hot chili peppers, chopped

1 teaspoon red hot peppers, sliced

1 teaspoon garlic, chopped

1/2 teaspoon sugar

1 teaspoon Black Soy Sauce

1/2 tablespoon Fish Sauce

3 tablespoons vegetable oil

Lettuce

Cucumber

Carrots

Instructions:

1. Wash and devein the prawns. Remove the heads and shells, while leaving on the tails.

2. In a wok, heat the oil. Fry the chili and garlic for 1 minute. Add prawns and stir-fry.

3. Season with sugar, soy sauce and fish sauce. Mix well, then add holy basil. Continue to stir-fry.

4. Add rice and mix well.

5. Transfer the contents of the wok onto a bed of lettuce on a plate. Garnish with pepper and carrot. Serve with sliced cucumber.
