FRIED RICE WITH CASHEWS (Khao Pad Met Ma-Muang Himaphan)

Ingredients:

1 cup Jasmine Rice, cooked

2 tablespoons cashew nuts, fried

2 tablespoons carrots, diced

2 dried mushrooms, soaked in water then diced

5 cloves garlic, crushed

1 teaspoon sugar

1 tablespoon Light Soy Sauce

2 tablespoons Fish Sauce

3 tablespoons vegetable oil

Instructions:

1. In a wok, heat oil. Fry garlic for 1 minute, then add carrot and mushroom.

2. Add rice and stir-fry.

3. Season with sugar, soy sauce, and fish sauce. Continue to stir-fry until well mixed.

4. Serve topped with cashews.
