THAI STYLE FRIED NOODLES (Pad Thai Goong)

One of the most popular Thai dishes, Pad Thai is a stir fried noodle dish which is simple and delicious.

Ingredients:

12 ounces Medium Rice Stick

10 tiger shrimps, shelled and deveined

2 tablespoons Minced Sweet Turnip

2 tablespoons black bean curd, diced

1 tablespoon Fish Sauce

4 1/2 tablespoons sugar

1/4 teaspoon Ground Hot Chili

2 tablespoons Tamarind Concentrate

3 tablespoons Sriracha Chili Sauce

4 tablespoons vegetable oil

2 eggs

2 cups bean sprouts

2 tablespoons unsalted peanut, ground

1 lime

4 chives or scallions

Instructions:

1. Soak the rice noodles in water for 4 hours, then drain them.

2. Heat the oil in a frying pan. Once hot, add shrimp, egg, black bean curd and sweet turnip. Stir-fry for 2 minutes.

3. Add noodles. Season with fish sauce, sugar, chili, tamarind juice, sriracha sauce and peanuts. Add bean spouts and chives.

3. Serve with lime on the side of the dish.
